This easy Greek Pasta Salad recipe made with feta, Fauji Rainbow Macaroni and veggies is a perfect, easy lunch you can enjoy at room temperature in less than 30 minutes!
-1 cup Fauji Rainbow Macaroni
-1/2 tablespoon extra virgin olive oil
-150 grams (1 cup) cherry tomatoes sliced into halves or quarters
-1 medium cucumber sliced into coins
-65 grams (1/3 cup) olives
-110 grams (4 ounces) feta cheese
-Cook the Fauji Rainbow Macaroni in a pot of boiling salted water, drain and rinse under cold running water to stop the cooking process. Toss it with half tablespoon of extra virgin olive oil and set aside to cool.
-In a small bowl, whisk together the extra virgin olive oil, garlic, and salt.
-In a large serving bowl, combine the pasta with the tomatoes, cucumber, olives, and feta cheese.
-Pour the garlic and oil mixture over the salad and toss.
-Sprinkle the salad with oregano and serve immediately, or refrigerate in a sealed container for up to 3 days.
